This introductory programme will give you the essential knowledge and skills for starting your career in the hospitality and catering industry as a chef, to ideally progress on to our VRQ Professional Cookery Diploma at level 2. This course will provide you with practical skills in food preparation and cooking and food and beverage service through training in the college's purpose-built kitchens and restaurants. This gives you a real taste of working in the hospitality industry.

There are practical elements, including the preparation and cooking of meat, fish, poultry, vegetables, soups, stocks, sauces and bakery goods. Theory elements underpin the knowledge you gain in practical classes, including food safety, hygiene and healthy eating.

Studens will learn to cook in a professional environment supported by a team of experienced tutors and you will be trained to give the best customer service in the training restaurants. Your course will be enhanced through participating in trips and visits to industry. You will have the opportunity to improve your English and maths.

Students will be assessed with written work, presentations, practical assessment of your skills and assignments demonstrating your subject knowledge and skills. The assignments will be graded pass, merit or distinctions. You will need at least a pass in every task to complete an assignment. Hospitality is a dynamic career and you can gain entry to the industry in a range of settings from fine dining to large scale conference and banqueting.
